Ingredients

  • For Yakhni Pulao Masla

  • 1 tbsp Salt
  • 2 tbsp Coriander (powder)
  • 8 Cloves
  • 12 Button Red Chilies
  • 12 Black Peppers
  • 1 tsp Ginger (powder)
  • 1 tsp Garlic (powder)
  • 2 sticks Cinnamon
  • 1 tsp Citric Acid
  • 2 Black Cardamom
  • 6 Green Cardamom
  • 1 tbsp White Cumin Seeds
  • 2 Bay Leaf (chopped)
  • 1 tbsp Papaya (powder)
  • 1 tbsp Garam Masala (powder)
  • For Mutton Yakhni Pulao

  • 750 g Mutton
  • 750 g Rice (soaked)
  • 3 Onions (sliced)
  • 1 tbsp Ginger (paste)
  • 1 tbsp Garlic (paste)
  • 1 tbsp Salt
  • 1 cup Yogurt
  • 1 cup Oil
  • 7 cups Water

Directions

  • For Yakhni Pulao Masla

  • Step 1:

    Take a bowl and add salt, coriander powder, cloves, button red chilies, black peppers, ginger powder, garlic powder, cinnamon sticks, citric acid, black cardamoms, green cardamoms, white cumin seeds, bay leaf, papaya powder and garam masala powder

  • Step 2:

    Mix everything very well and fill in a airtight jar and use as required

  • For Mutton Yakhni Pulao

  • Step 3:

    Start with take a pan and add water, mutton, ginger, garlic and 4 tbsp yakhni pulao masala

  • Step 4:

    Now cover the pan and cook on low flame until mutton tender

  • Step 5:

    Now Remove the mutton from stock and keep aside then measure stock and make up to 6 cups then sieve the stock and discard the spices

  • Step 6:

    Next heat oil in a pan and fry onions until they change color to golden then add mutton, stock, salt and bring to boil

  • Step 7:

    Finely add rice then cover the pan and cook until rice done then leave it on dum and serve hot
